Authentic Sri Lankan Chicken Curry

Sri Lankan chicken curry is simply a flavourful dish made in Sri Lankan households which will surely bring comfort and joy to you. The versatile flavours of this cuisine make it easier to pair this with many other dishes such as rice, Sri Lankan coconut roti, bread, milk rice, string hoppers etc.

Ingredients:

  • 1kg chicken – cut into sections
  • 1 onion – sliced
  • 1 tomato – chopped
  • 4-6 garlic cloves – minced
  • 3-4 green chillies – sliced
  • Curry leaves
  • Pandan leave – small piece
  • ½ inch ginger – chopped
  • 1 tbsp cinnamon powder/ stick
  • 3-4 cloves
  • 1–3 star anise
  • 1 tsp black pepper
  • 1tbsp chilli powder
  • 1 tbsp roasted curry powder
  • 4-6 Cardamom pods
  • 1 tsp fennel seeds
  • ½ tsp coriander seeds
  • 3-5 tbsp coconut oil
  • 2 cups water
  • ½ cup coconut milk
  • Salt to taste

Instructions:

Step 01: Add the chicken pieces into a bowl and season it with roasted curry powder, chilli powder, pepper and salt. Let it marinated for 30 minutes.

Step 02: Heat a pan on medium flame and add the oil when the pan is sufficiently heated. Add the onions, garlic, curry leaves, pandan leaf, ginger to oil and sauté until the onions turn golden.

Step 03: Add the cardamom pods, cloves, star anise, cinnamon, fennel seeds and coriander seeds, sauté for a minute and add the marinated chicken into the pan.

Step 04: Once the outer layer of the chicken starts developing colour add 2 cups water and let it simmer.

Step 05: Once the chicken is thoroughly cooked, add the coconut milk, tomatoes and green chillies and cook the chicken for another 3-5 minutes and let it cool slightly before serving this amazing Sri Lankan chicken curry with rice or anything your heart desires.
